Roast Partridge

If you haven't tried it yet you really should, partridge is surprisingly quick and easy to cook.

A single partridge is ideal for one person and looks very delicate and special when served whole on the plate.

Take you partridge and wrap it in some streaky bacon, this helps prevent it drying out. Preheat your oven at 180 degrees and roast the partridge for 20 - 25 minutes - any longer and it is likely to become dry. Rest for 10 to 15 minutes before serving.

This is the start of the partridge season and is a perfect time to try these delicious game birds. The flavour of a partridge is lighter and less "gamey" so it make s a perfect introduction to these Suffolk seasonal favourites.
