Make yourself some oven baked homemade Scotch Eggs. You will be surprised at how simple it is to do and amazed at how much better your own Scotch Eggs taste.

This is a really simple recipe for all the family, you can have fun making your homemade Scotch Eggs with your children / grand children.

Baked in the oven these are healthier than fried.

Ingredients:

1lb fresh sausagemeat

4 fresh eggs

A small amount of flour

Golden Breadcrumbs

Light cooking oil

Preheat the oven to around 180 - 200

Start with boiling three large eggs. Boil them to taste, if you like runny eggs then around 3 1/2 minutes should do it. I went for hard boiled at six minutes. (I knew I would have one left over for breakfast and prefer a solid yolk in cold scotch eggs)

With your eggs cooked take 1lb of our finest sausagemeat and divide into three.

1lb of fresh sausagemeat makes three good Scotch Eggs using large eggs. You would probably be able to make four with small eggs.

Having divided it into three make up some little sausagement nests.

Place your hard boiled eggs in the nests and gently close the edges in to form round balls.

This is easier with hard boiled eggs. With soft boiled eggs you will need to be gentle or you may split the eggs.

When you have your three sausagemeat balls ready take the fourth raw egg and whisk it up in a bowl.

Flour, Egg and Breadcrumbs.jpg

Place some flour in another bowl and get the golden breadcrumbs ready.

Start with the flour and give the sausagemeat balls a dusting of flour, knocking off excess flour.

Then dip the Scotch egg in the egg and get it thoroughly coated.

The final stage is to roll it in the golden breadcrumbs to get a good coating.

Your Scotch Eggs are then ready for the oven.

Place in an oven proof dish and give a light spray with vegetable oil.

Cooked Scotch Eggs.jpg
