Truly delicious Sutton Hoo chicken


Sutton Hoo chicken has a deserved reputation for delicious free range chicken of the very highest quality. Delivering a stunning flavour, amazing texture they are perfect for Sunday roasts.


Here's a simple way to cook one of these stunning chickens with thyme.


Take a chicken and loosen the skin on the breast by the legs and place a good amount of butter under the skin. This will melt and spread over the chicken whilst cooking. Place thyme on the chicken and cover with streaky bacon.



Here we have the chicken covered in thyme and bacon. The chicken takes the flavour of the butter, thyme and smoked bacon.

Next take some aluminium foil and lightly cover the top of the chicken. Don't wrap the bird tightly, the foil stops the legs and bacon burning.

Place in a pre heated oven at around 180 degrees and cook for about 20 mins per pound. Remove from the oven about 30 minutes from the end of the cooking time.


Remove the bacon from the top. This bacon makes the most fabulous bacon roll ;-)


Baste the chicken with juices from the pan and place back in the oven - raise the temperature to around 200 degrees for the next 30 minutes. Test it is cooked - here's the temperature guage again!


Now rest it! I cover it in foil and then put a clean towel on top - then I start on the potatoes etc. It can rest for 2 hours and more.


Serve when ready
